Cheesy Sausage Zucchini Casserole

This is a great casserole. It's full of yummy zucchini and fresh tomato. I don't know about you, but I can never find enough ways to use zucchini.

Preheat your oven to 325 degrees Fahrenheit/165 Celsius.
You will need a 2 quart casserole dish.

Ingredients:

1 cup water
1/2 cup white rice
16 oz pork sausage
1/4 cup chopped onion
1 cup chopped tomato-1 to 2 medium size tomatoes
4 cups chopped zucchini- 3 to 4 small or 2 medium
2 (4oz) cans sliced mushrooms, drained
2 cups shredded cheddar cheese
oregano to season- optional
salt to season
pepper to season

In a medium saucepan, add the rice and water.
Bring to a boil and turn down to a simmer.
Cover and cook 15 minutes OR until water is absorbed.
Take off heat, take off lid, and set aside.
While the rice is cooking, cook the sausage and onion in a skillet.
When the sausage is brown, drain.
Stir in the zucchini and tomato. Cook about 5 minutes until tender.
Stir in the rice, mushrooms and cheese.
Sprinkle with the salt, pepper, and oregano.
Put in the casserole.
Bake for an hour or until it is bubbly.

Serves 6 to 8.

Enjoy!

If you would rather use brown rice, follow package directions for making 1-1/2 cups.

Brocolli, Chicken, Cheesy Rice Casserole

This is a really great casserole.
It has chicken and cheese. It has the healthy broccoli in it. And it is quick to put together.
I always use long grain white rice, but feel free to use whatever kind you prefer.

Preheat your oven to 350 degrees Fahrenheit.
You will need a 2 quart greased casserole dish, preferably with a lid.

Ingredients:

3 cups cooked white rice
1(10-1/4 oz) can condensed cream of chicken OR cream of mushroom soup
2 cups shredded cheddar cheese
1-2 cups fresh or frozen cut up broccoli
1/4 cup chopped onion, optional
2 cups chopped up cooked chicken
4 slices American cheese, optional

If you are using fresh broccoli, you may want to partially cook it first before adding it. Otherwise it may stay somewhat crunchy.
In a large bowl, mix the soup and the rice.
Add the cheddar cheese, chicken, broccoli, and optional onion.
Pour into the prepared casserole dish.
If using, lay the slices of cheese over the rice mixture. Using the cheese slices will add a little more creaminess to the finished meal.
Cover the casserole and bake for about 30 - 40 minutes until bubbly and or cheese slices are melted.
Remove from the oven.
Take off lid and stir in the melted cheese.

Serves 6.

Ground Turkey Casserole


This is a great dish, especially on a rainy or cool day.
It is my daughter's favorite.
Originally it was made using ground beef, but I use ground turkey most of the time.


Preheat oven to 375 degrees F.
Uses a 2 quart casserole dish

Ingredients:

1 (10-1/4 oz.) can condensed cream of celery soup
1 (10-1/4 oz.) can condensed cream of chicken soup
1 (10-1/4 oz.) can condensed cream of mushroom soup
1 lb ground turkey or ground beef
1 large chopped onion
1/2 cup minute rice soaked in 1-1/2 cups warm water for 1/2 hour. Or cook 1/2 cup long grain white rice in 1 cup water for 15 minutes until water is absorbed.
salt and pepper are optional.


Brown the ground meat with the onion. In the casserole dish mix the meat, rice, and soups. Season with salt and pepper if you wish.
Cover the casserole and bake for 30 minutes. Uncover the casserole and bake for 30 minutes more.
Serve.

Serves 6.

Using low fat soup works wonderful in this.
