If your grandmother or mother ever made pie, you probably remember enjoying these tasty morsels.
Cinnamon pastry roll-ups are made from leftover pie crust dough.
It is very simple to make.
There is no set measurement. It all depends on how much pie crust you have leftover.
You will need a baking sheet or pan.
Ingredients:
Leftover pie crust dough- either butter crust or simple pie crust
butter
sugar
cinnamon
After making your pie, reroll the pastry scraps.
If it is a really large piece , divide it into 2 or 3 sections so that when you roll it up the roll-ups won't be too fat to cook completely.
With a knife, spread a thin layer of butter over the pie crust dough.
Sprinkle sugar liberally over the butter.
Sprinkle the cinnamon over the sugar.
Roll the pastry pieces. They will be like long cinnamon rolls.
Cut them into desired lengths.
Put on the baking sheets and put in the oven along with the pie.
Bake for about15-20 minutes until the pastry seems done and is just getting some color.
Pie crust made with butter will brown more and faster than a shortening crust.
Take out of the oven and let cool or eat warm.

French Toast
French toast is a great breakfast. It's very simple to make.
Serve with butter and maple syrup or, my personal favorite, powdered sugar.
Ingredients:
5 eggs
1/4 to 1/3 cups sugar
1-1/2 to 2 teaspoons cinnamon
2 teaspoons vanilla extract
1/4 cup milk
8-10 slices bread
You want a deep, wide bowl to be able to lay a slice of bread down into.
In a bowl combine the eggs, sugar, cinnamon, vanilla extract, and milk. Whisk well so it won't separate.
Heat a skillet or grill to medium-high heat.
Butter or oil the pan.
Lay a slice of bread into the egg mixture and get it well coated on one side. Flip it over to coat the second side.
Put the bread in the pan and cook for 3-4 minutes per side until golden.
Repeat with remaining bread.
You may need to stir the mix every few slices since the cinnamon seems to want to settle at the bottom.
A good tip so you don't drip egg mixture all over while transferring the slices to the pan, hold another plain slice of bread underneath so it drips on that and not the counter or stove.

Golden Cinnamon- Pumpkin Bars
These bars are moist and big on cinnamon flavor.Originally the recipe called for cinnamon chips, but I only had butterscotch so I used them and they turned out great. So, that is what I always use.
They also call for whole wheat flour instead of white, so make sure you have that on hand to make these.
Yummy!
Preheat your oven to 350 degrees Fahrenheit.
Lightly grease a 9"x13" baking pan.
Ingredients:
3/4 cup(1-1/2 sticks) butter
1-1/3 cups brown sugar
1 teaspoon vanilla extract
3/4 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
3/4 teaspoon ginger
1/4 teaspoon cloves
1/4 teaspoon allspice
1 egg
1 cup pureed pumpkin
1-1/2 cups whole wheat flour
1 cup cinnamon OR butterscotch chips
In the microwave or on the stove, melt the butter.
Add the brown sugar and combine.
Return to heat briefly to dissolve more of the sugar.
Let sit and cool to the touch.
Beat in the vanilla extract, baking powder, salt, cinnamon, cloves, allspice, and ginger.
Beat in the egg.
Add the pumpkin, flour, and chips and mix well.
Spread the batter in the baking pan.
Bake in the preheated oven 40-45 minutes until it tests done using the toothpick test. Moist crumbs may cling to the toothpick and it is still done.
Take out of oven and cool on a rack.
Cut into bars.

Snickerdoodles
Yummy!
These cookies need to be chilled before rolling and baking.
Ingredients:
1/2 cup(1 stick) butter, softened
1 cup sugar
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1 egg
1/2 teaspoon vanilla extract
1-1/2 cups flour
For rolling-
2 Tablespoons sugar
1 teaspoon ground cinnamon
In a mixing bowl, beat the butter til creamy.
Add the 1 cup sugar, baking soda, and cream of tartar.
Beat that well.
Scrape sides of bowl, if needed.
Mix in the vanilla extract and egg.
Blend in the flour.
Cover and chill for an hour.
Preheat your oven to 375 degrees Fahrenheit.
Get out some cookie sheets.
In a small bowl, mix the 2 Tablespoons sugar and cinnamon.
Take the cookie dough out of the fridge and roll it into balls. About 1 inch or so.
Roll the balls into the sugar/cinnamon mixture and put on cookie sheets.
Bake for 10-11 minutes until set and edges are golden.
You will get about 36 cookies.

Apple Butter
But, if you love apple and cinnamon(and who doesn't?) than this apple butter is for you.
It is super simple to make too.
You will need a large pot for cooking.
You will need 4-5 pint jars with flats and rings.
A water bath canner.
Ingredients:
8 cups unsweetened applesauce
1 cup apple cider vinegar
4 cups brown sugar
4-1/2 teaspoons ground cinnamon
Combine the applesauce, vinegar, brown sugar, and cinnamon in your large cooking pot.
Bring to a boil over medium heat and turn down to low, stirring very frequently.
Cook until the butter reaches desired consistency. This will take probably 45 minutes.
It is important that you keep it stirred so it will not burn.
Remove from the heat and put into the prepared jars. Seal.
Process in a water bath canner for 10 minutes.

Cinnamon Raisin Breakfast Biscuits
These are like the raisin breakfast biscuits you used to be able to buy in some fast food chains. I don't know if you can buy them anywhere anymore. But, you can now make them yourself.
They are great in the morning or even just as a snack.
Great served warm!
Preheat your oven to 400 degrees Fahrenheit.
Ingredients:
Biscuits
2 cups all-purpose flour
2 Tablespoons brown sugar
1 Tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter
2/3 cup milk
1/2 cup raisins
Icing
1/2 cup powdered sugar
2 to 3 teaspoons milk
Mix the flour, brown sugar, baking powder, cinnamon, and salt in a large bowl.
With a fork or pastry cutter, cut in the butter
Add the milk and raisins and stir just until moistened.
Knead the dough about 10 times until the dough is fairly smooth.
Pat or roll the dough til about 1/2" thick.
Cut into 10 or 12 biscuits with a floured biscuit cutter.
Place the biscuits on an ungreased cookie sheet and bake for 10-12 minutes. They will be golden slightly and when you touch lightly, the top will spring back.
Remove from baking sheet.
To make the icing, whisk together the powdered sugar and milk.
Drizzle over the biscuits.

Cinnamon Cookies
This is a simple drop cookie that is big on cinnamon flavor. If you love cinnamon, you will love these cookies.
Preheat your oven to 350 degrees F.
You will need a couple cookie sheets.
Ingredients:
1 cup butter, softened
1-1/2 cups sugar
1 egg
1-1/2 Tablespoon molasses
2-1/4 cups all-purpose flour
1-1/8 teaspoon baking soda
1 Tablespoon cinnamon
Cream the butter and sugar. Beat in the egg and the molasses. Add dry ingredients and mix well.
Drop by teaspoon or a small size cookie scoop onto ungreased cookie sheets. Bake for 10-12 minutes. Take off cookie sheets immediately.
Cool cookies on a wire rack.
Enjoy!

Raisin Bread
This raisin bread recipe is an old family recipe.
Bake in a preheated 350 degree F oven.
3 greased 8"x4" loaf pans
Ingredients:
2 cups warm milk
1 Tablespoon dry yeast
1 cup sugar
1 teaspoon salt
1/2 cup margarine or butter
2 eggs
5 teaspoon cinnamon
3 cups raisins
Approximately 6 cups flour
Proof yeast in bowl with warm milk. Let stand 5-10 minutes til frothy.
Mix sugar, butter, eggs salt, and cinnamon in separate bowl and than pour into yeast mix. Stir well. Add raisins and flour. I like to mix the raisins with about 3 cups of flour and add it together. Stir that and gradually add the rest of the flour. When it gets to thick to stir, now it it time to knead the dough. Add flour as needed. Do not add too much flour over 6 cups even if it seems to take it. It will not bake right. Knead for about 5 minutes. Put in greased bowl and cover. Let rise for an hour or two. Punch down and make loaves. Put in pans and let rise again. The second rise takes about 45 minutes.
Bake for 25-30 minutes. If you like you can bake for 35 minutes, but no longer.
Turn out of pans immediately.

Cinnamon Bread
This is a very simple quick bread to make. The great taste of cinnamon is swirled throughout.
Preheat oven to 350 degrees F.
Grease an 8"x4" loaf pan.
Ingredients:
1 cup sugar
1/4 cup oil
1 egg
1 cup buttermilk or sour milk
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon cinnamon
1/2 cup sugar
Mix the 1/2 cup sugar and 1 Tablespoon cinnamon in a small bowl. Set aside.
Mix the rest of the ingredients in a large bowl.
Alternate batter and cinnamon/sugar mixture in loaf pan. Make a few layers.
Bake for 50-60 minutes. Test for donenes with a toothpick inserted in the middle.
Let it rest for 5 minutes in the pan before loosening and turning out.
