Cinnamon Pastry Roll-ups

If your grandmother or mother ever made pie, you probably remember enjoying these tasty morsels.

Cinnamon pastry roll-ups are made from leftover pie crust dough.
It is very simple to make.

There is no set measurement. It all depends on how much pie crust you have leftover.

You will need a baking sheet or pan.

Ingredients:

Leftover pie crust dough- either butter crust or simple pie crust
butter
sugar
cinnamon

After making your pie, reroll the pastry scraps.

If it is a really large piece , divide it into 2 or 3 sections so that when you roll it up the roll-ups won't be too fat to cook completely.
With a knife, spread a thin layer of butter over the pie crust dough.
Sprinkle sugar liberally over the butter.
Sprinkle the cinnamon over the sugar.
Roll the pastry pieces. They will be like long cinnamon rolls.
Cut them into desired lengths.
Put on the baking sheets and put in the oven along with the pie.
Bake for about15-20 minutes until the pastry seems done and is just getting some color.
Pie crust made with butter will brown more and faster than a shortening crust.
Take out of the oven and let cool or eat warm.

Kolaches

Kolaches are Czech pastries. They are pieces of bread-like dough filled with preserves or jelly and baked.

My mom used to make these a lot while I was growing up.

Makes 36 kolaches.


Ingredients:

1 cup shortening
1/2 cup sugar
1-1/2 teaspoons salt
2-1/2 cups warm milk
2 eggs
1/2 teaspoon lemon extract-optional
1-1/2 Tablespoons dry yeast
5-6 cups flour

approximately 1/2 cup fruit preserves or jelly


Cream the sugar and shortening together in a large bowl.
Beat the eggs and add to the creamed mixture along with the milk, salt, and optional lemon extract.
Add the yeast and let stand for 5 minutes.
Add the flour and beat in.
Knead for a few minutes.
The dough will be slightly sticky.
Cover and let rise for 1 hour.
Punch down dough.
Grease cookie sheets and divide the dough into 36 equal pieces.
Roll into balls and put on baking pans at least 2 inches apart.
Let rise 15 minutes.
Preheat the oven to 450 degrees Fahrenheit.
Make an indention in the dough. Make it wide and deep.
Put about a 1/2 teaspoon preserves in each kolache.
Bake for 10-15 minutes or until the kolaches start to turn a golden brown.

Cool on a wire rack.

Use whatever type of preserve you want. In the picture I have used gingered pear jam.
This works best to make by hand. Using a stand mixture will cause you to need more flour and the dough will be way too sticky.

Apple Dumplings


An apple dumpling is an apple baked inside a piece of pastry. They are best served warm and maybe even with some ice cream on the side.

Preheat your oven to 375 degrees Fahrenheit.
You will need a 11" x 7" pan or a 9" x 13" pan.

Ingredients:

Syrup-
1-1/4 cups water
1 cup sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 Tablespoons butter

Combine in a saucepan and bring to a simmer. Cover and let simmer for 5 minutes. Add butter to the syrup.
Set aside.


Pastry-
2-1/4 cups flour
1/4 teaspoon salt
2/3 cup shortening
6-8 Tablespoons water

Combine the flour and salt in a medium bowl. Cut in the shortening with a fork or pastry cutter until the shortening is the size of small peas.
Add the water a little bit at a time, mixing just til it is moistened.
Form it into a ball.
Roll it out on a floured counter or board to approximately 18" x 12" size.
Cut into 6 equal pieces.


Inside-
6 medium small apples
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 cup sugar

Peel and core the apples. You can use you vegetable peeler for this. Or you can use a separate apple corer to core the apples. Otherwise, you can slice the apple in half and cut the core out and stick both halves together on the pastry square.
Once all the apples have been peeled and cored, put them each on their own piece of pastry.
Combine the sugar, cinnamon, and nutmeg. Sprinkle over the apples.
Moisten the edges of the pastry squares with water.
Bring up the four corners over the apple and pinch the dough together to seal.
Place the pastry covered apple in the baking pan.
Pour the syrup over the dumplings.
Bake for 45 minutes or until the apples are tender and pastry is browned slightly.

To serve, spoon syrup over dumpling.
