Lemony Garlic Kale

Kale is a super healthy vegetable. It is a member of the broccoli family. What makes it good, in my opinion, is the seasonings you use to serve it with.

You will need a pan large enough to hold the kale. It also needs a tight fitting lid.

Ingredients:

12 cups torn up kale. Use whatever kind of kale you prefer.
Juice from 1 lemon(2 Tablespoons, approx.)
1 Tablespoon olive oil
1/2 to 1 clove garlic, minced- depending on how much garlic flavor you want
1 teaspoon soy sauce
salt and pepper to taste.

Add a small amount of water to your large pan and bring to a boil.
Add the kale, cover, turn down the heat and let it steam for 7- 10 minutes. It need to be tender, but don't overcook or the kale will be bitter.
While the kale is steaming, mix the remaining ingredients in a large bowl.
Remove the kale from the heat and pour into a colander to drain any water.
Add to the lemon juice mixture and toss to completely coat.
Taste and season with more salt and pepper if needed.

Serve.

Serves 4-6.

  1. I've never eaten Kale on it's own like that. I'm from Dutch roots and Mom always use to mash it through potatoes and added bacon or sausage to it. My husband and I love it but my children aren't impressed with the "green potatoes".

    1. I want to talk to you about bitterness. My husband recently developed a medical condition which necessitates that he eat food very well cooked.
      I made him Kale and cooked it for a total of 30 minutes, using a recipe similar to yours and it came out delicious. I think if the Kale itself isn't bitter, overcooking won't make it so.
      Of course, adding lemon is the perfect remedy if in fact it is bitter. thanks

  9. This looks delicious! As soon as I buy kale for a recipe, the kids make kale chips (we've replaced potato chips!) and it's gone before I can make the the recipe.
